Ingredients

For the grilled chicken:

  • 6 boneless, skinless chicken breasts (about 150 grams each)
  • Olive oil for brushing
  • Salt and pepper to taste
  • 1 teaspoon dried thyme

For the salad:

  • 150 grams mixed salad greens (such as arugula, spinach, and lettuce)
  • 200 grams cherry tomatoes, halved
  • 150 grams cucumber, sliced
  • 100 grams feta cheese, crumbled
  • 50 grams walnuts, toasted and roughly chopped

For the vinaigrette:

  • 100 grams of Red Onion jam
  • 3 tablespoons balsamic vinegar
  • 5 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Let’s start cooking

Prepare the Grilled Chicken:

  1. Season Chicken: Brush the chicken breasts with olive oil and season both sides with salt, pepper, and dried thyme.
  2. Grill Chicken: Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 75°C (165°F).
  3. Let it rest for a few minutes, then slice thinly.

Make the Red Onion Jam Vinaigrette:

  1. Combine Ingredients: In a small bowl, whisk together the Red onion jam, balsamic vinegar, extra virgin olive oil, and Dijon mustard.
  2. Season with salt and pepper to taste. Adjust the consistency with a little water if too thick.

Assemble the Salad:

  1. Mix Greens and Vegetables: In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, and half of the crumbled feta cheese.
